- Feed starter during the day
- Mix starter, water, honey, salt, and flour in mixer for about 10 minutes on low
- Cover dough and let rise overnight (8 – 12 hours)
- Divide into 8 – 10 pieces and poke hole to shape bagel
- Cover bagels and allow to rise agin for 1 – 4 hours
- Preheat oven to 425 degrees
- Bring the water, baking soda, sugar to a boil in a large pot
- Boil bagels (3 – 4 at a time) for 1 minute on each side
- Remove bagels and dry on a wire rack, top with desired toppings
- Bake bagels on parchment-lined pan for 20 – 25 minutes
Pretzel Bites
To make pretzel bites, follow steps 1 – 3 above:
- Divide dough into 6 pieces and roll into a rope
- Cut rope into 2″ bites
- Cover and let bites rise for about 1 hour
- Preheat oven to 425 degrees
- Bring the water, baking soda, sugar to a boil in a large pot
- Boil a handful of bites at a time for 15 – 20 seconds, removing to a wire rack
- Cover with an eggwash and sprinkle with kosher salt
- Bake 15 – 20 minutes on parchment lined baking sheet
