Bagels or Pretzel Bites

  • 113 grams sourdough starter
  • 236 grams water
  • 560 grams flour (bread flour if possible)
  • 2 tbsp honey
  • 2 tsp salt
  • 1 tbsp baking soda
  • 1 tbsp sugar
  • 1 egg (pretzel bite)

  1. Feed starter during the day
  2. Mix starter, water, honey, salt, and flour in mixer for about 10 minutes on low
  3. Cover dough and let rise overnight (8 – 12 hours)
  4. Divide into 8 – 10 pieces and poke hole to shape bagel
  5. Cover bagels and allow to rise agin for 1 – 4 hours
  6. Preheat oven to 425 degrees
  7. Bring the water, baking soda, sugar to a boil in a large pot
  8. Boil bagels (3 – 4 at a time) for 1 minute on each side
  9. Remove bagels and dry on a wire rack, top with desired toppings
  10. Bake bagels on parchment-lined pan for 20 – 25 minutes

Pretzel Bites

To make pretzel bites, follow steps 1 – 3 above:

  1. Divide dough into 6 pieces and roll into a rope
  2. Cut rope into 2″ bites
  3. Cover and let bites rise for about 1 hour
  4. Preheat oven to 425 degrees
  5. Bring the water, baking soda, sugar to a boil in a large pot
  6. Boil a handful of bites at a time for 15 – 20 seconds, removing to a wire rack
  7. Cover with an eggwash and sprinkle with kosher salt
  8. Bake 15 – 20 minutes on parchment lined baking sheet
