Carrot Slaw

Ingredients

  • 2 – 3 cups shredded carrots (and other shredded vegatables like cabbage or broccoli)
  • Chopped scallion
  • Chopped chili peppers of preference
  • Mint (handful)
  • Cilantro (handful)
  • 3 tbsp lime juice
  • 1 tbsp fish sauce
  • 1 tbsp sesame oil
  • 1 tbsp sugar
  • 1 tsp salt
  • Chopped peanuts

  1. Peel and shred carrots
  2. Add scallions, clilis, mint, cilantro and toss to combine
  3. Combine remaining ingredients (except peanuts) and pour over the carrot mixture, tossing to combine
  4. Allow to marinate for 30 minutes
  5. Top with peanuts and serve
