From Cook’s Country episode
- Peel and shred carrots
- Add scallions, clilis, mint, cilantro and toss to combine
- Combine remaining ingredients (except peanuts) and pour over the carrot mixture, tossing to combine
- Allow to marinate for 30 minutes
- Top with peanuts and serve
