Charlotte’s Simple Sourdough Bread

  1. Place a large bowl on your food scale
  2. Add the ingredients at the specified weights (tare scale between adding each ingredient)
  3. With a spatula, gently mix all of the ingredients together
  4. Cover with plastic wrap, tea towel, or cloth; and let rise at room temperature for 4-6 hours
  5. Preheat a Le Creuset (or other baking dish) in the oven at 465°
  6. Spray a sheet of parchment paper with cooking spray (or lightly brush with oil) and set aside
  7. Lightly flour a work surface and scrape your dough out of the bowl and onto the surface
  8. Fold a bit and shape into a round and drop onto the parchment paper
  9. With a large knife, slide a cross or just one slit in the top of the dough
  10. When the oven has finished preheating, add the dough on parchment to the pan and cook for 30 minutes
  11. After 30 minutes, remove the lid of your Le Creuset and bake for an additional 5 – 10 minutes until brown on top
  12. Remove bread from the pan and let cool on a rack

Slice bread and toast for individual servings or reheat entire loaf (or partial loaf) in the oven at 300° for 10 – 15 minutes.
