- Place a large bowl on your food scale
- Add the ingredients at the specified weights (tare scale between adding each ingredient)
- With a spatula, gently mix all of the ingredients together
- Cover with plastic wrap, tea towel, or cloth; and let rise at room temperature for 4-6 hours
- Preheat a Le Creuset (or other baking dish) in the oven at 465°
- Spray a sheet of parchment paper with cooking spray (or lightly brush with oil) and set aside
- Lightly flour a work surface and scrape your dough out of the bowl and onto the surface
- Fold a bit and shape into a round and drop onto the parchment paper
- With a large knife, slide a cross or just one slit in the top of the dough
- When the oven has finished preheating, add the dough on parchment to the pan and cook for 30 minutes
- After 30 minutes, remove the lid of your Le Creuset and bake for an additional 5 – 10 minutes until brown on top
- Remove bread from the pan and let cool on a rack

Slice bread and toast for individual servings or reheat entire loaf (or partial loaf) in the oven at 300° for 10 – 15 minutes.
