- Melt butter (or olive oil) in a skillet over medium and when melted, add flour and whisk constantly for about 2 minutes
- Gradually add 3 cups of the milk, continuing to whisk
- Add salt and pepper and bring to a simmer but continue whisking
- Add the remaining 1 cup milk if it needs to thin a bit to reach desired consistency
Serve with mashed potatoes, or on homemade sourdough discard biscuits with sausage and eggs!
