Creamed Greens

  • 4 bunches of greens (8 cups chopped)
  • 1/4 cup butter
  • 1/4 flour
  • 1.5 cups whole milk
  • 1/4 tsp nutmeg
  • Salt and pepper

NOTE: you can also add in some grated or shredded parmesan cheese when it boils and thickens!

  1. Bring a large pot of water to boil over medium high
  2. Gradually add greens and cook until just wilted (2 – 3 minutes)
  3. Transfer to a colander to drain and press out as much liquid as possible
  4. In a pot, melt the butter and whisk in flour to create a roux
  5. Slowly add milk and continue whisking until the mixture comes to a boil and thickens
  6. Add greens and stir until coated
  7. Stir in nutmeg and/or other seasonings to taste
