NOTE: you can also add in some grated or shredded parmesan cheese when it boils and thickens!
- Bring a large pot of water to boil over medium high
- Gradually add greens and cook until just wilted (2 – 3 minutes)
- Transfer to a colander to drain and press out as much liquid as possible
- In a pot, melt the butter and whisk in flour to create a roux
- Slowly add milk and continue whisking until the mixture comes to a boil and thickens
- Add greens and stir until coated
- Stir in nutmeg and/or other seasonings to taste
