Fish Tacos

Serves: 2 – 4

  • cod, talapia, or other white fish
  • salt
  • Tajin seasoning (or lemon pepper or preferred fish seasoning)
  • small corn tortillas
  • cooking oil spray

  • lime wedges
  • cilantro
  • cheese
  • pickled onions
  • avocado

  1. Arrange fish on parchment lined pan and sprinkle with salt
  2. Allow fish to set for about 10 minutes to allow the salt to absorb
  3. Season fish with a good amount of Tajin or other preferred fish seasoning
  4. Bake at 400 degrees for 15 – 25 minutes (until it’s cooked through and flaking)
  5. Heat a small skillet over medium-low heat (4.5 on my electric range)
  6. Once skillet is hot, spray with cooking oil spray and add fist tortilla
  7. Cook tortillas, one at a time, for 1 minute on each side and then immediately transfer to a tortilla warmer. Add more cooking spray every third tortilla or to preference
  8. Once fish is done, flake in all the seasoning and add to a serving dish
  9. Serve family style with tortillas staying warm in warmer and fish in serving dish along side sauces and toppings!
