- Arrange fish on parchment lined pan and sprinkle with salt
- Allow fish to set for about 10 minutes to allow the salt to absorb
- Season fish with a good amount of Tajin or other preferred fish seasoning
- Bake at 400 degrees for 15 – 25 minutes (until it’s cooked through and flaking)
- Heat a small skillet over medium-low heat (4.5 on my electric range)
- Once skillet is hot, spray with cooking oil spray and add fist tortilla
- Cook tortillas, one at a time, for 1 minute on each side and then immediately transfer to a tortilla warmer. Add more cooking spray every third tortilla or to preference
- Once fish is done, flake in all the seasoning and add to a serving dish
- Serve family style with tortillas staying warm in warmer and fish in serving dish along side sauces and toppings!

- cod, talapia, or other white fish
- salt
- Tajin seasoning (or lemon pepper or preferred fish seasoning)
- small corn tortillas
- cooking oil spray

- Adobo Mayo (blend 1/2 small can of adobe chiles, 1/2 cup mayo, 2 tbsp lime juice)
- Copy cat Chick fil-A Sauce
