- Cook macaroni according to package directions, drain, set aside
- In a large pot or dutch oven, cook beef with onion and garlic. Drain fat if desired/excessive
- Add beef broth, tomatoes, tomato paste and seasonings and bring to a boil. If using any fresh, uncooked vegetables, add those in now.
- Simmer for 15 minutes to allow flavors to develop (and for vegetables to cook through if using fresh).
- Add the frozen vegetables and cook an additional 5 minutes
- Add cooked macaroni and serve!

- 1.5 cups dried small macaroni
- 1 lb ground beef
- 1 onion
- 2 tbsp minced garlic
- 6 cups beef broth (bouillon works fine)
- 14 oz can of diced or stewed tomatoes
- 2 tbsp tomato paste
- 1 – 2 tbsp Worcestershire sauce
- 1 tsp oregano
- 1 tsp dried basil
- salt and pepper to taste
- frozen (or fresh if on-hand) mixed vegetables like carrots, peas, edamame, green beans…whatever sounds good!)
