Hamburger Soup

  • 1.5 cups dried small macaroni
  • 1 lb ground beef
  • 1 onion
  • 2 tbsp minced garlic
  • 6 cups beef broth (bouillon works fine)
  • 14 oz can of diced or stewed tomatoes
  • 2 tbsp tomato paste
  • 1 – 2 tbsp Worcestershire sauce
  • 1 tsp oregano
  • 1 tsp dried basil
  • salt and pepper to taste
  • frozen (or fresh if on-hand) mixed vegetables like carrots, peas, edamame, green beans…whatever sounds good!)

  1. Cook macaroni according to package directions, drain, set aside
  2. In a large pot or dutch oven, cook beef with onion and garlic. Drain fat if desired/excessive
  3. Add beef broth, tomatoes, tomato paste and seasonings and bring to a boil. If using any fresh, uncooked vegetables, add those in now.
  4. Simmer for 15 minutes to allow flavors to develop (and for vegetables to cook through if using fresh).
  5. Add the frozen vegetables and cook an additional 5 minutes
  6. Add cooked macaroni and serve!
