Poke Bowl

Serves: 2 – 3

Ingredients

Fish and marinade

  • .75 – 1lb fresh wild caught salmon or tuna (thawed and sushi-grade)
  • 1/4 cup soy sauce
  • 1 tbs rice vinegar
  • 1 tbs mirin
  • 1 tbs sriracha
  • 1.5 tbs sesame oil
  • 1 tbs minced ginger
  • 1 tbs minced garlic
  • 2 green onions (chopped)
For Bowls
  • 1 – 2 cupx cooked rice (brown or wild rice for mediterranean)
  • 1 – 2 tbs furkiake seasoning (or sesame seeds and chopped seaweed snack)
  • sliced avacado
  • shelled edamame
  • julienned carrots and/or cucumber
  • limes
  • sriracha mayo (sriracha, mayo, lime juice)

Recipe provided by Fair Weather Salmon at the Boise Farmers market or Boise Co-Op.

  1. Chop salmon or tuna into about 1/4 inch pieces
  2. Combine all of the marinade ingredients and pour over the fish
  3. Marinate for about an hour
  4. Meanwhile, cook rice using preferred method
  5. When ready, distribute the rice in bowls and top with fish and other bowl toppings
