Salmon Jerkey

  • 1 large salmon filet
  • 1/2 cup soy sauce
  • 1 tbsp molasses
  • 1 tbsp sugar
  • 1 tbsp Worcestershire sauce
  • 1 tbsp lemon juice
  • 1/2 tbsp pepper
  • 1 tsp liquid smoke
  • dashes of Tabasco to preference

  1. Combine all marinade ingredients.
  2. Slice salmon into strips and remove skin and add to marinade. Marinate for 4 hours.
  3. Set the dehydrator to 135 degrees (or manufacturer’s recommendation) and dry for 8 hours.

Note: used the hanging racks and dried in long strips.
