Turnovers (Calzone, Empenada)

Serves: 6 – 8

Dough:

  • Sourdough or;
  • Pizza dough or;
  • refrigerated large biscuits (2 packages)

Fillings (make sure to season meats and cook):
  • Ground beef/turkey (prepare or use leftover seasoned ground meat like taco meat, sloppy joe, spaghetti sauce)
  • Shredded or diced cook chicken
  • Cured meats like salami, pepperoni
  • Shredded or finely diced cheese (cheddar, American, feta, mozzarella all work well)
  • Vegetables (broccoli, spinach, olives, diced peppers or chilis,)
  • Rice or beans for a vegetarian option
  • Sauce (marinara, Velveta-Rotel, enchillada, pesto)
  • Herbs (basil, rosemary, cilantro)

Basically like homemade hot pockets these can be customized to your liking and a great use for leftover meats and sauces! They are great leftover and can also be frozen.

  1. Make dough as normal
  2. Divide into 10 – 12 parts and roll out each on a floured surface
  3. Spoon and/or sprinkle fillings onto the dough, fold over, and pinch closed
  4. Place each turnover on a parchment lined pan;
  5. If using biscuit dough, bake at 350 degrees for 15 minutes (rotate racks if using multiple racks half way through)
  6. If using sourdhough or pizza dough, bake at 425 degrees for 35 – 40 minutes (rotate racks if using multiple racks half way through)
