Feel free to add 1/2 lb ground turkey or other meat if you prefer, along with the onions and garlic. Cook until meat is fully done before proceeding to additional ingredients.
- In a large pot or dutch oven, add oil, onion, peppers/chilis, and garlic and sauté 3 – 5 minutes until onion is cooked through.
- Stir in chili powder and cumin and cook about 1 minute until fragrent.
- Add tomatoes, chipotle chilis in adobo sauce, and water then bring to a simmer.
- If you’re using canned beans, add them now and simmer for 20 minutes, then add corn and simmer additional 5 minutes.
- If you’re using softer, freshly cooked beans, let the mixture simmer without beans for 15 minutes and then add the beans and corn to simmer an additional 5 minutes.
- Serve with toppings!
