Hummus

Prep: 10 minutes

Ingredients

  • 15 oz can or 1.5 cups cooked chickpeas
  • 2 – 4 tbsp reserved bean liquid (aquafaba)
  • 1/4 cup fresh lemon juice
  • 1/4 cup stirred tahini
  • 1 – 2 tbsp garlic (minced or chopped)
  • 2 tbsp olive oil
  • 1/2 tsp cumin
For spicy hummus add:
  • 3 chopped dried chilis with seeds
  • 1 tsp cayenne pepper

Vitamix Blender Instructions

  1. Add liquid ingredients to Vitamix (aquafaba, lemon juice.
  2. Next add the tahini, garlic, chickpeas, and seasonings.
  3. Now blend (using dip preset if available) for 1 to 1.5 minutes adding more aquafaba if it’s too thick.
  4. Lastly, mix in the olive oil (it can taste bitter if it’s processed)

Food Processor Instructions

  1. Add tahini and lemon juice in a food processor and process for 1 minutes.
  2. Scrape the bowl (should be whipped) and add spices and process another 1 minute scraping the sides half way through.
  3. Add half of the chickpeas and process for 1 minute.
  4. Add remaining chickpeas and process until thick and smooth.
  5. Thin to desired consistency with 2 -3 tbsp of the aquafaba and olive oil.
