Ingredients
- 15 oz can or 1.5 cups cooked chickpeas
- 2 – 4 tbsp reserved bean liquid (aquafaba)
- 1/4 cup fresh lemon juice
- 1/4 cup stirred tahini
- 1 – 2 tbsp garlic (minced or chopped)
- 2 tbsp olive oil
- 1/2 tsp cumin
For spicy hummus add:
- 3 chopped dried chilis with seeds
- 1 tsp cayenne pepper
Vitamix Blender Instructions
- Add liquid ingredients to Vitamix (aquafaba, lemon juice.
- Next add the tahini, garlic, chickpeas, and seasonings.
- Now blend (using dip preset if available) for 1 to 1.5 minutes adding more aquafaba if it’s too thick.
- Lastly, mix in the olive oil (it can taste bitter if it’s processed)
Food Processor Instructions
- Add tahini and lemon juice in a food processor and process for 1 minutes.
- Scrape the bowl (should be whipped) and add spices and process another 1 minute scraping the sides half way through.
- Add half of the chickpeas and process for 1 minute.
- Add remaining chickpeas and process until thick and smooth.
- Thin to desired consistency with 2 -3 tbsp of the aquafaba and olive oil.
