Pumpkin Oat Bars

Ingredients

  • 2 cups whole oats
  • 1 tbsp ground flax seed
  • 1 tsp baking powder
  • 1.5 tsp pumpkin pie spice
  • .5 tsp cinnamon
  • .5 tsp salt
  • 1.5 cups pumpkin puree or canned pumpkin
  • 1.5 cups almond milk (or oat milk, or regular milk)
  • .25 cups maple syrup
  • 1 tbsp coconut oil
  • 1/2 cup chopped walnuts or other nut

  1. Preheat oven to 375 degrees
  2. Combine dry ingredients in a bowl and then add in wet ingredients and 1/2 nuts
  3. Pour into a casserole dish or pan, top with remaining 1/2 of the nuts, and bake 35 minutes
