Sloppy Joes

Ingredients

  • 1 lb ground beef or turkey
  • 1 small onion chopped
  • 1 – 2 tbsp oil
  • 2 -3 tbsp tomato paste
  • 1 tbsp minced or chopped garlic
  • 2 tsp paprika
  • 2 tsp brown sugar
  • 2 tsp crushed red pepper
  • 1/2 tsp salt (or more to taste)
  • 1/4 cup ketchup
  • 2 – 3 tbsp Worcestershire sauce
  • 2 tbsp vinegar (preferably apple cider or red wine)
  • Buns or sliced bread or a zucchini boat if making gluten-free

This recipe is adapted from America’s Test Kitchen’s “Classic Sloppy Joes.” We simplified the steps (and dishes) because the thickening agents seemed unnecessary.

  1. In a medium – large skillet (I prefer using a cast iron skillet), heat the olive oil over medium heat and add the chopped onions and garlic. Cook for about 2 minutes until softened.
  2. Add all of the spices and tomato space and stir in until fragrant and well-combined (a few minutes).
  3. Add your ground meat of choice (I prefer ground turkey for this recipe); and cook until cooked through
  4. Add the ketchup, Worcestershire sauce, and vinegar and cook another few minutes. Keep warm over low heat and then serve on a bun, large slice of toasted sourdough bread, or even on a zucchini boat for a gluten-free option.

Pairs well with pickles and slaw!
