Asian Slaw

Ingredients

  • 1.5 – 2 cups shredded cabbage or combination of shredded cabbage, carrots, broccoli stems
  • 1 tbsp honey
  • 1 tbsp lemon or lime juice
  • 1 tbsp peanut butter
  • 1 tbsp soy sauce
  • 1 tsp fish sauce
  • 2 tsp rice vinegar
  • 2 tsp sesame oil
  • fresh grated ginger if available

This recipe was on an episode of Tim Farmer’s Country Kitchen that I saw on our local PBS station. This show seemed cheesy at first but he has some wonderful recipes and I’ve come to enjoy this show on Sunday afternoons!

  1. Shred the cabbage and other vegetables in a large bowl
  2. Separately mix the remaining dressing ingredients
  3. Pour dressing on cabbage mixture and allow to marinade for 30 minutes to an hour
  4. Top with peanuts or sesame seeds to serve

This recipe is similar in taste and style to the Carrot Slaw recipe but more of a peanut flavor and without the mint if you don’t have that on hand. A great side for Fish Tacos, Pulled Pork, or Sloppy Joes!
