Mediterranean Cod

Ingredients

  • 2 – 4 cod filets
  • 2 – 4 tbsp olive oil
  • 1 tsp salt
  • 1 tbsp Italian seasoning
  • 1 tbsp crushed red pepper
  • Handful of green or black olives
  • 1/2 small onion sliced
  • 8 oz canned tomatoes, or a few handfuls of fresh chopped or cherry tomatoes
  • lemon wedges for serving

This is a tasty, non-breaded way to enjoy cod!

  1. Preheat the oven to 375°
  2. While oven is pre-heating, pat cod filets dry and sprinkle with salt
  3. Arrange filets in an oiled baking dish, sillet, or parchment lined baking sheet
  4. drizzle with 1 – 2 tablespoons olive oil and half of the dry seasonings
  5. Cover filets with onions, olives, and tomatoes
  6. Drizzle with the remaining olive oil and seasonings and then bake for 30 minutes

Serve with lemon wedges and a healthy grain. Optionally, top with some parmesan, breadcrumbs, or crutons.
