This is a tasty, non-breaded way to enjoy cod!
- Preheat the oven to 375°
- While oven is pre-heating, pat cod filets dry and sprinkle with salt
- Arrange filets in an oiled baking dish, sillet, or parchment lined baking sheet
- drizzle with 1 – 2 tablespoons olive oil and half of the dry seasonings
- Cover filets with onions, olives, and tomatoes
- Drizzle with the remaining olive oil and seasonings and then bake for 30 minutes
Serve with lemon wedges and a healthy grain. Optionally, top with some parmesan, breadcrumbs, or crutons.
