Smash Burgers

Ingredients

  • 8 oz ground beef
  • salt and pepper to taste
  • Burger Fixin’s like pickles/relish, onions, cheese, lettuce, tomatoes, sauce
  • Buns unless you’re going keto

My nephew insisted that since we have a Blackstone, we had to make smash burgers. So I purchased a cast iron “smasher” (not sure what it’s actually called) but summer quickly turned to winter and I didn’t get around to trying this. Then, I caught an episode of America’s Test Kitchen on PBS and they were making these on a cast iron skillet so I figured I’d give it a shot!

So this recipe is based on their video.

  1. Measure out beef into 2 oz balls
  2. Heat cast iron skillet (or Blackstone grill) over medium low heat for 5 minutes to make sure it’s heated through
  3. Prep all your fixin’s
  4. Add two balls to the skillet and SMASH them down as thin as possible, sprinkle with some salt and pepper, and cook for 2 minutes on the first side (should start to cook through if they are amply smashed)
  5. Flip with a spatula (fish spatula works best), and cook about 15 seconds on the second side
  6. Remove patties and place on buns and proceed to second patties for a double decker smash burger

These go great on sourdough pretzel buns, with some copy cat chick filet sauce, and pickled onions!
