My nephew insisted that since we have a Blackstone, we had to make smash burgers. So I purchased a cast iron “smasher” (not sure what it’s actually called) but summer quickly turned to winter and I didn’t get around to trying this. Then, I caught an episode of America’s Test Kitchen on PBS and they were making these on a cast iron skillet so I figured I’d give it a shot!
So this recipe is based on their video.
- Measure out beef into 2 oz balls
- Heat cast iron skillet (or Blackstone grill) over medium low heat for 5 minutes to make sure it’s heated through
- Prep all your fixin’s
- Add two balls to the skillet and SMASH them down as thin as possible, sprinkle with some salt and pepper, and cook for 2 minutes on the first side (should start to cook through if they are amply smashed)
- Flip with a spatula (fish spatula works best), and cook about 15 seconds on the second side
- Remove patties and place on buns and proceed to second patties for a double decker smash burger
These go great on sourdough pretzel buns, with some copy cat chick filet sauce, and pickled onions!
